Christmas Crepes

Our Christmas Crepes recipe is so easy as it uses only seven ingredients, but oh so wonderfully delicious making Christmas brunch a weekly occurrence!

Ingredients

Batter

  • 3 eggs
  • 1/4 tsp salt
  • 2 cups flour
  • 2 cups milk
  • 3 Tbsp. melted butter

Topping

  • 3 Tbsps of Sour Cherry Vieux Carré, plus ~1 Tbsp per crepe
  • 1 pkg cream cheese, set on counter to soften

Instructions

Using a hand blender, regular blender or food processor, mix together all ingredients of the batter until smooth. Can also use a whisk, but slowly incorporate the flour to avoid large lumps.

Prep the topping by mixing 3 Tbsp of the Taste Preserved Sour Cherry Vieux Carré fruit spread into the softened cream cheese. The hand blender will make quick work of this too.

Heat a large pan over medium high heat (around 375 to 400 degrees F). If using a stainless steel pan, spread a thin layer of butter and allow it to heat for 20 seconds to avoid sticking. If using non-stick, no need to add butter to the pan.

Using a soup ladle or large ice cream scoop, scoop the batter into the center of the pan and then use the back of the ladle to spread the batter out starting in small circles and gradually circling the batter outwards in to a large circle. Once golden brown on the first side, flip to the other side and allow it to cook until golden brown as well.

You can make all the pancakes at once and keep warm in a pancake holder or oven on the lowest setting. Once ready to assemble, add a generous Tbsp of the cream cheese topping and a Tbsp. extra of the Sour Cherry Vieux Carré. Fold into half and then half again. Option to sprinkle with powdered sugar for the snow effect. Serve and enjoy!
